Roasted Carrots
Ingredients:
- 2 pounds carrots, peeled
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- chopped parsley
- honey
Preparation:
- Preheat oven to 425 degrees and line a baking sheet pan with parchment paper (for easy cleanup).
- Arrange carrots on sheet in a single layer.
- Brush carrots with oil and sprinkle with salt and pepper.
- Bake 18-20 minutes, turning the carrots halfway through.
- Drizzle with honey.
- Garnish with parsley.
- Serves 6.
