Chicken Flamingo
Ingredients:
- 1/2 c. frozen broccoli
- 1/2 c. sliced fresh mushrooms
- pinch crushed red pepper
- 1/2 c. white wine
- 1/2 c. lemon juice
- 1/2 c. butter
- 1/2 c. seasoned bread crumbs
- 2 Tbsp. olive oil
- 1/4 c. Italian cheese blend (parmesan, provolone, mozzarella)
- 1/4 tsp. fresh ground garlic or garlic powder
- 2 - 6 oz. chicken breasts (boneless, skinless)
Preparation:
Sauce
- Saute wine, lemon juice, butter, garlic and red pepper over medium heat.
- Bring to a boil and add broccoli and mushrooms.
Chicken
- Lightly coat the chicken breasts with olive oil and coat with bread crumbs.
- Cook on an open grill until plump and tender.
- Top with cheese blend until melted.
- Pour sauce over chicken breast with slotted spoon. Be careful not to overpower the chicken with the sauce!
- Serves 2.
